Hello,
If you can find a cooler that isn't any larger than say 30" x 13" x 20" tall, then yes, it should fit fine.

Would i have to construct a custom seat in order to get the seat high enough?

We don't have the capability of modifying them, but how high are you looking to go? Perhaps we have another one that will fit the bill!
